My mom called tonight~requesting that I make her favorite "pumpkin roll" for Thanksgiving.  I think I will make it this week and put it in the freezer.

Dazzle family and friends with Libby's® Pumpkin Roll; moist and creamy, with a tantalizing aroma and beautiful presentation.

Estimated Times:
Preparation - 45 min | Cooking - 13 min | Cooling Time - 1 hrs refrigerating | Yields - 10

Ingredients:

  • 1/4 cup powdered sugar (to sprinkle on towel)
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup LIBBY'S® 100% Pure Pumpkin
  • 1 cup walnuts, chopped (optional)
  • 1 package (8 ounces) cream cheese, at room temperature
  • 1 cup powdered sugar, sifted
  • 6 tablespoons butter or margarine, softened
  • 1 teaspoon vanilla extract
  • Powdered sugar (optional)

Directions:
FOR CAKE:
PREHEAT
oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.

COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

FOR FILLING:
BEAT
cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving.


We are having a cool night , started a  fire in the fireplace, even Tigger decided it was to cold to  roam the streets tonight.

    This definitely looks really yummy. I haven't done one of those roll things for years.... in fact.... since my last marriage. I did a yule log which took me about all day, but it was really good. This looks a bit easier. Might give it a try.[ROLLEYES]

    oooo. now that looks sinfully yummy. I'll have to give that a try. My cat Elvis was like that. He calmed down a bit after I had him "fixed" but he still felt the need to galavant occasionally.

    How is Elvis...? Does he tend to wander like Tigger? I swear, I let the other cats out this morning... Tigger screamed until I thought I was going to have to sedate him or me. I realized if I sedated him then he would continue to scream, only he would sound like a drunk cat. WHY he wants out I have no idea... he has been fixed.... he eats like a king here...... where does he go for 24 hrs??????[HUH]

    sadly, Elvis is no longer with us. he "went back to Graceland" a number of years ago at the ripe old age of 13. I miss him even still. He was a wonderful pet who helped me get thru some dark days after Mr. Bugg passed.[SAD]

    that is my daughter's favorite! her aunt always made it for her. but her aunt lives in Georgia now. I guess I will have to try my hand at it. I woke up to a very foggy morning, time for another temp change! [HEART]

    oh I know! The thing is, I want to make it all year long... I have such a horrible sweet tooth!! It's also the biggest hit as far as deserts go.[HEART]

    I bet you can... go to splenda's web site and see what measurement equals X amount of sugar. Someone told me once there was some type of scale.[WINK]

    oh that sounds good. I would show the recipe to the wife, but she'll wouldn't make it for me. (She always watches out for my diabetes, don'cha know) But I might show my mother-in-law. She is always willing to help me cheat and she makes the world's best chocolate cake.
